Deans not acting like that at all - he's simply upset that Sam doesn't care anymore and he just doesn't understand why. He knows Sam doesn't have a soul but as a person WITH a soul obviously he can't fully comprehend what being soul-less means, so he's acting the only way he can. I don't think he's blaming him in any sense, just confused and wondering what the hell to do. When they had that argument out by the car he clearly WANTED Sam to stay with him, he was just conflicted as to whether that would be best for both of them or if Sam even wanted to be with him.
